The farm produces about 200 tonnes of grapes each year, most of which is delivered to Swartland Winery. We use the remainder to produce small quantities of handcrafted wines. The Dragonridge philosophy is simple: make wines from unirrigated vineyards that are pruned and suckered to produce small yields of grapes with concentrated flavours. This also allows us to minimise the use of sulphur, and to vinify the wines with minimal interference. We try to bottle without filtration.
Making wine on the farm began In 2004 with a production of 1200 bottles. In 2008 we should have available 6,000 bottles, and we plan to double this over the next few years. Our reds are a Sangiovese and a Shiraz / Mourvedre / Pinotage / Cabernet Sauvignon blend (our version of a Cape Blend). The white is usually a blend of Chenin Blanc / Chardonnay/ Viognier.
During harvest, wine-making getaways allow individuals and groups to enjoy weekends of hands on wine-making experience from picking to bottling. By arrangement, wine-tasting lunches and overnight getaways are available to taste wines of the region and to benefit from the comfortable accommodation, delicious food and wonderful surroundings of our guest house Fynbos Mountain Retreat.
